After a few days of heavy rain we decided to head out for dinner. The pool day had to be cancelled so wanted to make the best of the day so headed over to Bistro Mexican where we had been invited over for dinner by Hans the owner and his wife.
One thing the restaurant does that I haven’t seen any other do in Cebu is it brings out snacks while your waiting for your meal to be cooked. Tortilla Chips with a nice salsa dip to get you in the mood for eating. We sat there chatting about the restaurant and the daily events and what we planned to do once the rain stopped.
We promptly seen the arrival of our burrito and enchilada which were portions bigger than we had expected which also came with Mexican rice which was very tasty and some refried beans.
Fajitas then arrived with Chicken meat on a bed of onions and various different bell peppers. The chicken was very juicy and could easily manage to have just one of these meals on its own but Hans also wanted us to try the Quesadilla so we moved onto our final dish of the afternoon. The Quesadilla is strong in cheese flavour and comes with a mix of salsa and meat, ideal dish to finish off our large lunch.
An important thing to mention here is that Hans spends time making sure he’s got the right ingredients for the food which means things which are often skimp on in other restaurants aren’t casualties here. You get real cheese, great meats and as authentic Mexican dishes as possible. On top of that good service by people who love what they do.
